Sounds good already! This is my favorite juicing recipe that I’m going to share with you today – it’s one with a bit of lemon/ginger zing, it is super healthy, a little sweet and it tastes good.

When it comes to juicing I am really not a fan of the earthy juices that contain beetroot – they taste – well just too much like earth. I believe beetroot is much better roasted with some rosemary and olive oil!

What you’ll need

Use whichever juicer you have. • Peel the ginger

• Pour into 2 beautiful glasses, add some ice and enjoy with a friend.

The whole juicing procedure shouldn’t take more than 8 minutes from preparing your produce to pouring that golden liquid into the glasses. Personally I feel it’s best to always drink your juices right after you have made them rather than storing them so you get all the benefits of the fresh ingredients.

Serves 8 to 12

6 Large Roma tomatoes, sliced crosswise in 1/2″ thick slices.

1 tsp. Salt, divided

1 1/2 Tbls. Wholegrain Dijon Mustard

3 Tbls. Minced fresh basil

8 oz. Fresh mozzarella, sliced 1/2″ thick slices (enough to cover pan)

1/4 cup Grated Parmesan Cheese

2 Large Eggs, beaten

1 cup Heavy Cream


  • Tobasco
  • Ground White Pepper

Additional Basil to Garnish

Bake blind in a quiche pan the pie crust until very lightly golden. Sprinkle sliced tomatoes with half the salt and let them drain on a paper towel-lined baking sheet 30 minutes. Pat dry. Spread the mustard evenly over the bottom of the pie crust. Arrange the tomato slices over, and sprinkle with fresh basil. Top with cheese slices. Sprinkle with Parmesan. Mix together the eggs, cream, Tabasco, remaining salt and pepper. Pour over the tomatoes and cheese. Bake at 375 or 350 Convection Bake for about 25-30 minutes. Cool slightly before serving. Garnish with additional fresh basil.
